1 Whole chicken
1 lbs. Butter
1 Sprig of rosemary
6 Garlic cloves
2 tbs. salt
2 tbs. pepper

Directions:
Directions:
1. Preheat your oven to 350º
2. Soften your butter
3. Chop your garlic and rosemary
4. Combine all your ingredients except the chicken, into a bowl.
5. Whisk all ingredients until it is evenly combined.
6. Place chicken in a roasting pan and truss the chicken.
7. Smear the compound butter all over the chicken and under the skin.
8. Cook chicken for an hour and a half.
(If not done after the time given, stick it back into the oven until it is done check it periodically to make sure it does not over cook.)
