2 medium onions, sliced
2 T. butter OR dripping
1 T. curry powder
1 tsp. salt
1 T. sugar
1 T. vinegar
2 lb ground beef
1 ¼ c. milk
2 eggs

Directions:
Directions:
Fry onions in drippings/butter until lightly browned
Sprinkle curry powder over onions; add salt, sugar, vinegar, and meat and mix well together
Soak bread in milk, then drain off the milk and mash bread with fork.
Add it to the meat mixture, together with 1 beaten egg.
Turn into buttered casserole dish.
Add sufficient milk to the milk drained from the bread to make up to ¾ c.
Beat remaining egg and mix with the milk
Season with salt + pepper and pour over meat mixture in casserole dish
Dot with butter over top and bake at 350º for 40-50 minutes

This recipe for Bobotie is a traditional South African dish. Anything that comes out of my kitchen is easy and simple to make and uses staple ingredients that everyone has in their cupboard. You will often find it on the “potluck” table when I am there.
