1 qt. warm water
1 Tbs. Oil
1 pkg. (2 oz.) yeast
9 cps flour
1 Tbs. salt
1 cup Rye flour
1 Tbs. sugar
1 ½ Tbs Caraway Seed


Directions:
Directions:
Mix water, yeast, salt, sugar, oil, and caraway seed together.
Add 6 cups of the flour and mix very well (until dough looks satiny). Add rest of the flour and mix very well again.

On floured board, knead the dough by hand.
Put in greased bowl; grease top, cover and let rise 1 hour.
Divide into 4 equal parts Shape into round loaves, put into pie pans, grease top and let rise another hour.
Bake 40 min at 375º ; then another 20 min at 350º.

You can shape into rolls instead of loaves if desired. Dusting tops with flour before baking will make crustier loaves.

I started making this recipe into 36 rolls, rolling them in flour when I shape them. I love them with summer sausage, braunschweiger, or pulled pork!
