½ Lb. Bacon, Coarsely Chopped
12 Cups Shredded Cabbage
1 Medium Onion, chopped
2½ Quarts Chicken Stock
1 Cup Half-and-Half
2 tsp. Salt
½ tsp. Pepper
Grated Swiss Cheese

Directions:
In large stockpot, fry bacon until crisp, remove from pot and set aside. To the drippings add the cabbage and onion, over medium heat sauté stirring about 10 minutes or until cabbage limp. (Do not let it brown)Add stock and simmer 10-15 minutes until onion and cabbage are tender. Remove from heat and put 3 cups (mainly cabbage) into blender and purée, Return to pot and stir in Half-and-Half,
Season, Serve with Bacon and grated cheese.
