2 oranges (approx. 10 oz) skin on, scrubbed and roughly chopped
5 eggs- separated into mixing bowls
7 oz caster/berry sugar
8 oz. ground almonds
2 T. flaked almonds
Sifted icing sugar

Directions:
Put chopped oranges in small saucepan. Add 1 T. water
Cover and cook gently for 30 min. until oranges are soft and excess liquid evaporated. Leave to cool
Pre-heat oven to 350º. Line bottom and sides of 9 in. springform cake pan with parchment baking paper.
Finely chop oranges in food processor, or blender
Whisk egg whites until firm stiff peaks form.
Gradually whisk in half of the sugar. Whisk 1 minutes
Using same whisk, whisk egg yolks with remaining sugar for 2-3 minutes or until pale and thick.
Whisk in oranges then, carefully
Fold in ground almonds. Stir in 3 T. whisked egg whites to loosen mixture. Fold in remaining whites ad put mixture into cake pan.
Level top and sprinkle with flaked almonds
Bake for 50-55 minutes or until golden and skewer comes out clean.
Check at 20 minutes and 30 minutes.
Cover with foil if browning to quickly
Let cool in pan, turn out. Peel away parchment paper.
Transfer to sering plate and dust with icing sugar
Store in airtight container
