¼ Cup Sliced Green Onion
2 Cloves Garlic; minced
1 T. Butter
1½ Cups Shredded Carrots
3 Eggs; beaten
1½ Cups Shredded Monterey Jack Shredded Cheese or Cheese of your choice
3 T. Yellow Cornmeal
½ tsp. Dried Basil
¼ tsp. Ground Nutmeg

Directions:
Directions:
In medium skillet sauté onion and Garlic in butter until tender but not browned. Add carrots and cook about 2 minutes longer until crisp tender. In large bowl egg, cheese, cornmeal, basil and nutmeg. Stir in carrot mixture and pour into 9-inch round pie plate or quiche dish sprayed with non-stick coating. Bake at 325º for 20-25 minutes or until set.
