1 c. quick oatmeal
1 c. buttermilk
1 egg
1/2 c. brown sugar
1 c. flour
1/2 t. salt
1 t. baking powder
1/2 t. soda
1/2 c. Wesson oil

Directions:
Directions:
Soak oats in buttermilk for 1 hour.
Then add egg and beat well. Add sugar and mix. Add flour, salt, baking powder, soda. Add oil.

Bake in greased muffin tins for 15-20 minutes at 400o.

We always fixed these with tuna noodle casserole. I think it was because it was the only way Mom could get us to eat the casserole.
