2 c. graham cracker crumbs
2 T. melted butter
1 t. cinnamon
Mix
Press half into bottom of 9 x 9 pan.

Beat:
3 egg yolks
1 can Eagle Brand
2 c. applesauce
grated rind of lemon
2 T. lemon juice.
Fold in beaten egg whites

Sprinkle the remaining graham cracker crumb mixture on top.

Bake at 350o for 35-40 minutes.

Put whipped cream on top.

This recipe didn't have a name. It was written on the back of part of an elections form dated 1950, when R.A. Dollarhide was County Clerk. Remember when Grandma used to help out on the Election board every year? It was always exciting to go Mt. George and have Grandma in the Library......
