1 lb. fresh cranberries
1½ c. sugar
¾ c. orange juice
2 tsp. grated lemon rind
2 tsp. grated orange rind
4 tsp. water
4 tsp. cornstarch

Directions:
Directions:
Combine cranberries, sugar, rinds, and juice.
Bring to a boil on medium-high heat.
Lower heat and simmer until cranberry skins pop.
Crush popped berries against the side of the pot.
Remove from heat.
Combine cornstarch and water; stir into berry mixture.
Place over heat and boil until sauce thickens.

First graders have been making cranberry sauce for years. Mary Jo Segawa and I used this fun activity for much discussion and fun with measurements. Each child in the group did something to make the sauce. Everyone was so enthusiastic about their part, that the recipe was usually a bit heavy with the grated rinds. The kids loved the results! We served the cranberry sauce at the Thanksgiving feast. First graders were the pilgrims & Kindergartners were the Native Americans. I hope this recipe brings back memories to our former students.
