1 cup shredded Parmesan cheese, divided
2 tbsp Italian seasoning, divided
3 cloves garlic, minced
3 tbsp extra virgin olive oil
1 jar pizza sauce
1 cup shredded mozzarella
salt and pepper to taste

Directions:
Directions:
Preheat oven to 400 degrees.

In large mixing bowl, combine cauliflower, 1/2 Parmesan cheese, garlic, olive oil, salt and pepper. Toss until ingredients are well combined and cauliflower is well coated.

Spray 9 X 13 baking dish and line with cauliflower mixture and bake on top rack for 30 minutes. Transfer baked cauliflower back into mixing bowl and combine with 1/2 pizza sauce and 1/2 mozzarella cheese. Mix quickly and transfer back into baking dish.

Layer 1/2 mozzarella on top and 1/2 pizza sauce.
Top with desired toppings: pepperoni, Canadian bacon, peppers, onions, olives, etc.

Reduce oven temperature to 350 degrees and bake for 30 minutes.
