5 large potatoes peeled
1 large onion
3 eggs
⅓ cup of flour
1 teaspoon salt
¼ teaspoon pepper
¾ cup of vegetable oil for frying

Directions:
Directions:
Grate the potatoes and onion using a fine grater. Place the vegetables in a colander and press out the excess water. In a large bowl combine the vegetables with the eggs, flour, salt and pepper, mixing well. In a skillet heat ½ cup of oil till it is sizzling. Lower heat, add a scoopful of batter into the oil. Press it down to form a patty. Cook one side for 5 minutes and then flip the patty and cook on the other side for 2 or 3 minutes until golden brown. It is important to cook the patties on medium heat so they are cooked through when they are brown. Remove the patties from the oil and place on paper towels to absorb excess oil. Continue until the batter is gone, adding a little oil to the pan as necessary. Cooked patties can be kept warm in a low oven. Serve with apple sauce.
