1 Loaf unsliced French bread baguette
3 tbsp. Olive Oil
8 oz. goat cheese w/herbs, shredded
¾ c. (8 oz.) ricotta cheese
2 c. (8 oz.) shredded mozzarella cheese
1 clove garlic, minced
Dash white pepper
24 sun-dried tomato halves (oil packed) cu into strips

Directions:

Slice bread into ¼” thick slices. Place bread on baking sheet, brush tops with olive oil.
Bake at 300 degrees for 12 minutes or till golden brown. Cut a garlic clove in half; rub on each hot crostini.

In a large mixing bowl:
combine goat cheese, ricotta cheese, mozzarella cheese, minced garlic and white pepper. Blend well.

Spread each bread slice with some of the cheese mixture. Top with tomato strips and return to oven.
Bake about 3 minutes or until the cheese begins to melt. Makes about 40 appetizers.
