1 lb boneless skinless chicken breast, cut into 1/2 inch cubes
1 medium onion
1 ˝ teaspoons garlic powder
1 cup Monterey Jack cheese, shredded
2 (15 1/2 ounce) cans great northern beans, rinsed and drained
32 ounces chicken broth
1 teaspoon salt
1 teaspoon oregano
˝ teaspoon pepper
1 teaspoon cayenne pepper
1 cup sour cream
2 (4 ounce) cans diced green chilies
Optional
shredded cheese, cilantro leaves, green onion, jalapeno slices, toasted garlic bread slices

Directions:
Directions:
In large saucepan, sauté chicken, onion and garlic powder in oil until chicken is no longer pink.
Add beans, chilies, seasonings, and chicken broth. Bring to a boil.
Reduce heat and simmer (uncovered) for 30-60 minutes.
Remove from heat, stir in sour cream. Add garnish. Serve immediately.

Eleanor’s grandmother created this version of white chili and it is a favorite.  Our family loves this soup during the winter months!
