12 oz egg noodles (or whole wheat egg noodles) 
2.5 C milk (skim, 1%, or 2%)
3 T butter
1/3 C flour (or whole wheat flour)
1/2 C grated cheddar cheese, plus some for topping
1 large (9 oz) can tuna in water
1 small (4 oz) can tuna in vegetable oil
Salt to taste

Preheat oven to 325 degrees. Lightly spray 9 x 13 baking dish with cooking spray. While oven is preheating, prepare noodles according to package instructions and begin preparing sauce. 

Sauce: In a medium saucepan, melt butter on medium/low heat. Whisk flour into cold milk in measuring cup. After butter is melted, whisk flour and milk mixture in. Keep whisking occasionally to prevent clumping and until sauce has thickened. After sauce has reached the desired consistency, remove from heat and stir in 1/2 C of grated cheddar cheese and stir in until melted.

After draining noodles, return to large pot and pour prepared sauce over the top. Mix well. Drain cans of tuna and break apart, then stir into noodle and sauce mixture. Mix well adding salt to taste.

Pour casserole mixture into prepared 9 x 13 baking dish, top with the desired amount of shredded cheese, and bake for 20 mins.
