1lb cubed chicken
1 cup sliced carrots
1 cup frozen peas
1/2 c butter
1/2 cup chopped onion
1/2 cup flour
1/2 tsp salt
1/4 tsp. pepper
1 3/4 cup chicken broth (or water with a cube of bullion)
2/3 cup milk
2(9inch) unbaked pie crust
1 egg white

Directions:
Preheat oven to 375 degrees. COmbine chicken, carrots, and peas in a large pot add water and boil for 15 minutes. Drain and set aside. Ina saucepan cook onion in butter until soft and translucent. Stir in flour, salt, and pepper. Slowly stir in chicken broth and milk. Simmer over medium heat until thick. Remove from heat and set aside.
Unroll one pie crust and place in the bottom of pie pan. Brush with egg white and bake in preheated oven for about 6 min or until lightly browned. Place chicken mixture on top of the lightly baked crust. Cover with the top crust and seal the edges, cut away excess dough. Make several small slits in the top and brush with the egg white. Bake for 40 min. until pastry is golden brown.
