3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup self rising flour
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
2 3 oz cream cheese (room temperature)
4 Tablespoons butter (room temperature)
1/2 tsp vanilla
1 cup powdered sugar
1/4 cup pecans (optional)
Extra powdered sugar to roll up in
Directions:
Directions:
Mix flour, cinnamon, ginger, nutmeg and salt together
Set aside
Beat eggs on high for 5 minutes then add sugar and beat
Stir in pumpkin and lemon juice
Fold in flour mixture

Line a cookie sheet with wax paper and spray with pam
Spread mixture on. It will be thin
Bake 15-20 minutes at 375 degrees Check after 15 minutes

Have a clean dry dishcloth with sifted powdered sugar on it
Turn the cookie sheet on it and pull off wax paper
Roll up in the towel Set aside to cool completely
Mix your cream cheese, butter, powdered sugar and vanilla
until smooth. You can stir in 1/4 cup of pecan pieces if you want
Unroll cake and spread cream cheese mixture on it
Roll up (not in towel) and wrap in Saran Wrap. Put in fridge
