2 c. cooked quinoa, cooled
1/3 c. milk
4 eggs
1 tsp. vanilla extract
½ c. butter, melted and cooled
¼ c. coconut oil (melted) or preferred oil
1 c. sugar
1 c. unsweetened cocoa powder
½ tsp. baking soda
1 ½ tsp. baking powder
½ tsp. salt

Preheat oven to 350º and line two round cake pans or 9x13 pan with parchment paper
In food processor, or blender, combine eggs, milk, vanilla extract and blend until combined. Add cooled quinoa, melted butter and oil, blend until completely smooth (30-45 seconds)
Mix dry ingredients in a large bowl then pour wet ingredients into the bowl and mix together until combined
Divide batter into two pans and bake for 30 minutes

Top with whipped cream and fruit to serve!
