Wahoo fillets
Italian dressing mix (in envelope)
Olive oil
2 sticks butter
Garlic salt
1 tablespoon lemon juice

Directions:
Directions:
Mix Italian dressing with olive oil.
Marinate Wahoo fillets in the Italian dressing for up to 24 hours
Make foil pan for the grill.
On the grill melt butter in foil pan.
Add garlic salt and lemon juice.
Sear fillets on grill, (not in foil pan yet) while brushing them with the butter mixture.
Place fillets in foil pan and pour Italian dressing mixture over.
Cook for about 10-15 minutes.
Sear again on grill before serving.

Todd was a cook on the boat Nana Gayle from Ono Island, Alabama. They came twice to Hawk's Nest Resort when we were working there on Cat Island in the Bahamas. This fish is terrific and easy.
