Dean Maddux

2 gallons tomatoes peeled and chopped
1 gallon onions minced
14 jalapeno peppers minced with seeds removed
1 tablespoon garlic powder
5 tablespoons canning salt (usually not iodized)
4 or 5 sweet peppers (bell peppers) minced
2 teaspoons black pepper
5 tablespoons sugar
2 teaspoons chili seasoning
2 cups white vinegar

Prepping tomatoes takes while, but probably canned could be used.
Cook all ingredients together 1 hour at high altitude (7500 ft.)
Pour into sterilized jars.
Put new seals on top.
Screw on rings.
Put into a large pan of hot water so that the water covers the jars completely.
Boil for 10 minutes.
When removed from the water, the jars will seal (you can hear them pop and see the seal in the middle indent).
This makes about 15 pints.
