6 small squash sliced

1 medium onion, chopped

salt and pepper to taste

2 eggs

1 small can evaporated milk

8 oz. sharp cheddar cheese, grated

16 Ritz cracker crumbs

Directions:
Directions:
Cook squash and onions until very soft in a small amount of water (just enough to cover bottom of pan). Salt and pepper.

In a large bowl combine eggs, milk, cheese, and crackers. Spoon quash and onions into above mixture.

Spray casserole dish with cooking spray. Pour squash mixture into a pan. Bake at 350º for 30 minutes.
