2 lbs. yellow squash, sliced

1 large onions, chopped

salt and pepper to taste

2 eggs, beaten

¾ c. saltine crackers, crushed

½ c. butter

Directions:
Directions:
Cook squash and onions until very soft in a small amount of water (just enough to cover bottom of pan). Salt and pepper. When done, let cool; then add eggs, saltines, and butter.

Pour into greased 2 quart casserole Bake at 325º for 20 minutes

*This can also be mixed and frozen until ready to use.
