5 russet potatoes sliced1/4" thick
1 onion sliced into rings
Salt and pepper to taste
3Tbl butter
3 Tbl all purpose flour
2 cups milk
1 1/2 cups cheddar cheese

Directions:
Directions:
Preheat oven to 350º

Butter a 1 qt baking dish

In a fry pan brown flour and butter.
Add milk
Stir until thickened

Remove from heat and stir in 1 cup of Cheese
Layer 1/2 potatoes in the dish
Top with onion slices
Add remaining potatoes

Pour cheese mixture over the potatoes
Cover with foil and baked for 1 hour
