3 lb yellow squash
1 medium onion, chopped
6 bacon slices
2 tsp salt, divided
½ tsp pepper

Directions:
Directions:
Wash the squash. Cut into ½ inch slices. Place in large saucepan. Add enough water to cover the squash. Add 1 tsp salt. Cook over medium-high heat until squash comes to a boil. Reduce heat, continue cooking until squash is fork tender. About 10 minutes. Place in colander to drain.

In a large frying pan, cook the bacon until crisp. Remove bacon. Crumble and set aside.

Add the onion to the bacon drippings and cook until tender. About 5 minutes. Add the drained squash, black pepper and 1 tsp of salt to the onions. Stir to mix. Heat the squash through. Just before serving add the crumbled bacon to the squash.
