4 large tomatoes, slice 1/4-inch thick
1 medium sweet onion, sliced thin
¼ c vegetable oil
¼ c red wine vinegar
Sliced black olives, optional
¼ tsp black pepper
3 cloves garlic, pressed - divided
Salt

½ c butter
¼ c parmesan cheese, grated

Directions:
Slice tomatoes. Sprinkle each tomato slice with salt on both sides. Place in 9x13 inch dish that has a tight fitting cover. Add onion slices and black olives.

In a jar combine the oil, vinegar, 2 cloves of garlic, minced and black pepper. Shake well. Pour over tomatoes. Cover and refrigerate tomatoes for a couple of hours.

To make the bread, preheat the oven to 400º. Slice the bread lengthwise into two pieces. Then cut each piece in to a serving size. Place butter in a small bowl. Microwave butter to melt. Add 1 clove of minced garlic. Stir to blend. Drizzle the garlic butter on the cut side of bread slices. Sprinkle with parmesan cheese and paprika. Bake approximately 10 minutes or until lightly browned around the edges.

To serve, place tomato slice, onion and olives on a slice of bread.

This is just a messy one...Roll up your shirt sleeves. If you have put your Zap together correctly, when you take a bit the juice will start running down your arms.

Uncle Cal method: Poke holes in the bread with a fork. Put a spoonful of the dressing from the tomatoes on the bread. Pick thru the tomatoes and get the onion and olives you want on your bread, then put the tomato slice on top. This way the onion doesn't hit you in the nose when you take a bite!
