Stuffed Squash Recipe

6 medium yellow squash
6 bacon slices, partially cooked
1 small onion, chopped
1 c seasoned bread stuffing
1 large egg, lightly beaten
½ c sharp cheddar cheese, shredded
2 T butter
Paprika
Salt and Pepper, to taste

Preheat oven to 350º.

Wash squash thoroughly. Cook in boiling, salted water to cover for 8 to 10 minutes or until tender but still firm. Drain and cool slightly. Remove and discard stems.

Cut in half lengthwise, remove pulp and reserve, leaving a firm shell. Place shells on jelly roll pan or in 9x13 inch ovenproof casserole.

Sauté onion in butter until tender.

In a large bowl combine the squash pulp, bread stuffing, egg, sautéed onion, salt and pepper. Mix well. Put the stuffing and squash mixture in the squash shells.

Top each squash with cheese and bacon. Bake for 20 to 25 minutes or until heated through.
