1 pound lean ground beef
1 large chopped onion
1 chopped bell pepper
1 can (14.5 ounce) diced tomatoes with green chilies
1 can kidney beans, undrained
1 can corn, undrained
1 tablespoon chili powder
½ teaspoon salt

Directions:
Directions:
Cook ground beef until almost done. Add onion and bell pepper and cook until vegetables are tender and meat is no longer pink. Add chili powder and salt. Mix well. Stir in beans, tomato and corn. Cover and simmer 30-45 minutes until liquid is absorbed.

This is my stand-by recipe when I am rushed, and one of my husband's favorites. Add cornbread and a salad and you have a complete meal.
