4 large tomatoes, sliced ¼ inch thick
1 c cornmeal
2 T sugar
¼ c flour
½ c vegetable oil

Directions:
Directions:
Preheat oven to 250º.

On a paper plate combine the cornmeal, sugar and flour. Mix well.

Heat the oil in a large skillet.

Dredge the tomato slices in the cornmeal mixture.

Cook in skillet over medium high heat, turning after 3-4 minutes. Tomatoes should be lightly browned before turning. Lightly brown the other side. Remove to absorbent paper towels to drain. Place on heat resistant plate.

Place in oven to keep warm.

Note: Be careful handling the tomatoes when cooking, they break easily.
