1 ½ cups cooking oil
2 eggs
2 cups white sugar
3 cups flour
1 ½ teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 cup crushed pineapple well drained
2 cups grated carrots
1 cup walnuts or pecans (chopped)

Preheat the oven to 350º F. Mix the dry ingredients together in a large bowl. In another bowl mix the rest of the ingredients except the carrots together. Add to dry ingredients and stir till just combined. Add the carrots and stir till just combined. Put the cake into greased loaf pans or a tube pan. Bake for 1 hour and 20 minutes or until the tester comes out clean. Let sit for a few minutes and then remove from the pan and place on rack to cool completely

1 pound icing sugar
1 - 8 ounce package of cream cheese (at room temperature)
3 tablespoons room temperature butter
Splash of vanilla

Beat the cream cheese, butter, and vanilla together. Gradual add the icing sugar, beating between each addition, until the desired consistency is achieved. Spread on cooled cake.

Personal Notes:
Linda Allan sometimes omits the vanilla and adds a little orange juice and zest to the icing. This cake can be cooked in a 11 by 13 inch Pyrex pan and just iced on top.
