5 lg garlic cloves, minced
⅓ c EVOO + 3 T EVOO, divided
6 slices day old French bread or Italian Bread, crusts trimmed, 1 inch thick
3 T sherry wine vinegar
2 lb tomatoes, chopped into bite size pieces
1 medium red onion, thinly sliced
6 oz blue cheese, crumbled, at room temperature

In small bowl, place garlic in ⅓ c EVOO and let stand at room temperature 30 minutes or cover and refrigerate overnight.

Brush bread on both sides with garlic oil and grill (or bake in oven) until golden brown.

Combine vinegar, 3 T oil and minced garlic cloves in large bowl. Season generously with salt and pepper.

Add tomatoes and onions and let stand 30 minutes, stirring occasionally. Cut bread slices into cubes. Add bread to tomatoes and add cheese.

Great summertime salad with local tomatoes!

How can you go wrong with a Bread Salad...if this isn't a "Hall Girl" recipe, I don't know what is...including the Hall girls that married into the family!! Aunt Robin likes this just fine without the blue cheese too!
