¼ c onion, chopped
3 T cider vinegar
2 tsp spicy brown mustard
1 tsp sugar
½ tsp salt
¼ tsp freshly ground black pepper
1 c vegetable oil
½ lb bacon, cooked and crumbled
2 bunches romaine lettuce, torn
7½ oz hearts of palm, drained and quartered
8½ oz artichoke hearts
4 oz blue cheese, crumbled

Purée onion with vinegar in blender. Blend mustard, sugar, salt and pepper. Gradually add oil in a thin, steady stream and continue beating until thick.

Mix lettuce, hearts of palm, artichokes, blue cheese, bacon in a serving bowl. Toss with dressing and serve.
