2 sticks unsalted butter
2 c. + 2 T. bread flour
1 tsp. kosher salt
1 tsp. baking soda
1½ c. granulated sugar
¼ c + 1 tsp. dark molasses
1 egg
1 egg yolk
1½ tsp. vanilla extract
2 c. chocolate chips (dark or milk)
Hawaiian sea salt for sprinkling on top

Preheat oven to 350ºF. Melt butter in medium saucepan on low. Sift together flour, salt, and baking soda. In a medium bowl, mix sugar and molasses until no clumps remain. Pour butter into molasses mixture, mix on medium speed with hand mixer until well blended (about 3 minutes). Add egg, yolk, and vanilla extract, mix well. Slowly fold in flour mixture until well combined. Stir in chocolate chips. Chill dough for 20 minutes, then scoop onto parchment paper on baking pans. Sprinkle with sea salt. Bake for 8 minutes, rotating pan halfway through.

I love molasses and I love chewy cookies! Sometimes I'll forego the chocolate chip cookies to get extra molasses enjoyment. If the cookies come out a little too under-done for you, increase the baking time up to 10 minutes; each oven has its own personality. Also, you just learned a life-hack (or cooking-hack, really), too. You made your own brown sugar! You could just use brown sugar instead, if you'd like. In fact, that'd probably make things easier too, since molasses can be a little tricky, especially if you're baking these with your kids. But the molasses flavor is totally worth the extra step, I promise.
