Ingredients: 2 lbs. ground beef 2 eggs 2 tsp. mustard (regular or Dijon) 2 tsp. Worcestershire sauce 1 onion, minced 2 cloves garlic, minced 1 tsp. salt 1 tsp. pepper Ideas for different flavors: ¼ c. barbecue sauce 2 tsp. curry powder 4 tsp. Cajun seasoning 2 tsp. Hoisin sauce ¼ c. creamy dressing (ie. Ranch or Caesar) ¼ c. tzatziki sauce and ½ c. feta cheese ⅓ lbs. bacon, chopped or minced (use less beef)

Directions:Lightly oil grill, heat to medium. Whisk eggs in bowl, then add all ingredients besides beef (including ingredients for flavors, besides bacon, if you chose one). Mix well. Crumble in beef (and bacon, if you'd like), gently mix together. Gently shape mixture into burgers (¾" thick). Make a shallow depression in center of each burger to help cook evenly. If saving them for later, wrap and freeze. Place burgers on grill, close lid. Cook for about 5 minutes on medium-well burgers, turning once. Serve on toasted buns, with your toppings and condiments of choice. Makes about 12-16 patties, depending on how big you make them. |

Notes: You might look at this recipe and wonder why there's so much meat. I more often than not finish work, pick up my daughter, get home and have to have dinner prepared within half an hour or so lest Miss Grumpypants' beautiful-and-flawless-but-still-scary face begins her hungry rampage through our snack cabinet. So I usually prepare too much on purpose and will freeze half the prepared patties (make sure you've wrapped them with no air!), so I have something to quickly grill in a pinch. Feel free to cut the entire recipe in half if all you need is dinner tonight, plus maybe some left overs for tomorrow.
