1 c Flour seasoned with salt and pepper
1 Beaten egg thinned with a tiny bit of water
1 c Panko (Japanese bread crumbs)

The amount you use will depend on how many pieces you have to bread. Start with 1 cup for about 1 1/2 dozen. Add more as you go.

Put three ingredients in three separate bowls or plates. Dredge fish in flour, then egg, then Panko. Place coated shrimp or fish onto rack. Allow to set about 10 minutes. (clean up the mess while they set)

Will fry quickly.
