Ingredients: 1 c. Men-tsuyu (3x concentration) ⅓ c. sugar 2 c. water 1 T. sesame oil
Ideas for fillings: 3 lbs. thinly sliced beef 1 pkg. tofu, cut into bite sized pieces 1 stalk Tokyo green onion, cut into bite sized pieces 1 pkg. Shirataki noodles ½ Nappa cabbage, cut into 2" pieces 1 pkg. enoki mushrooms

Directions:Combine Men-tsuyu, sugar, water, and sesame oil in medium sized pot, bring to boil, stirring occasionally. Reduce heat to simmer, place your selection of fillings in the pot, starting with ingredients that take longer to cook, such as the tofu or the meat. Simmer until ingredients are cooked to your liking, and serve with hot white rice. Yields 4-5 servings. |

Notes: This is by no means a traditional way to make sukiyaki. My wife loves sukiyaki and I'm a lazy cook; if there's one thing my mother taught me about cooking, it's more important that the food taste good than you cooking things the "right" way. I'll pull this recipe out if I'm making sukiyaki for a quick dinner tonight plus leftovers for lunch tomorrow. The measurements for the sauce is how my family likes it; it may come off a little sweet. It may be safe to start with less sugar and add more after tasting it. Also, feel free to add a quarter cup of sake or mirin if you'd like a deeper flavor. Keep in mind, however, that men-tsuyu already contains soy sauce, sugar, mirin, and dashi (it already contains all the ingredients used to make the sukiyaki sauce!), so start conservative. Regarding the fillings, this is also very flexible. The ingredients listed are leaning toward traditional, but experiment to meet your family's tastes. I personally like lamb instead of beef (or both, even better!), and I've had sukiyaki with soft boiled eggs, they soak up the sauce and come out great (just watch out for over-boiling).
