Ingredients: 4 or 5 large onions 4 tablespoons butter 2 tablespoons all purpose flour 6 cups tepid water or consommé 2 cups milk (optional) 1 teaspoon coarse salt 1/4 teaspoon pepper 4 to 6 pieces of bread toasted

Directions:Peel onions and cut in two. Slice each half onion as thinly and evenly as possible. Heat the butter in a large heavy skillet. Add the onions and stir constantly with a wooden spoon, until the onions are a golden brown colour. Then add the flour and continue cooking over low heat stirring often, until it takes on a light golden colour. Add the water or consommé and salt. Bring to a boil stirring constantly, and then simmer for 8 to 10 minutes. Add scalded milk if using. Taste for seasoning. Pour soup over the toast. Serve with a bowl of grated cheese |

Notes: Additional serving suggestions: To serve this soup with swiss cheese: Slice very thin or grate 1/2 pound of cheese. Place 1/3 of the toasted bread in the bottom of a soup kettle or pyrex dish. Sprinkle ( or cover) with one third the cheese. Make 3 such layers. Pour onion soup with or without milk over. Cover and place in a 400.º F. oven for 10 minutes. To make gratinée onion soup: For a good gratin use a dish that is wider than it is high, so that the oven heat is spread over a larger surface. A few minutes before serving, pour the onion soup in the dish, Top with toasted bread and sprinkle generously with grated or sliced cheese. Pour 1 tablespoon of lightly peppered melted butter over the cheese. Place in a 500º F. oven to obtain a lovely golden crust (from 10 to 20 minutes) Serve immediately.
