½ c. - ¾ c. sugar
¾ c. margarine or butter
2 eggs
pinch of salt if using butter
1 ¼ c APF
1 ½ t. baking powder
1-4 T. Milk
3-4 drops lemon extract
¼ t. vanilla (optional)
4 large or 5 small apples
powdered sugar to sprinkle

Cake:
Soften butter, add sugar and eggs. Beat well. Add flavorings. Separately in a bowl mix flour, baking powder, and put into butter mixture. Blend altogether. Test dough's thickness by putting on a tablespoon and hold upside to see if it drops. If it doesn't fall off, add milk. If it is runny, add flour. Grease round 8" (1 ½" deep) or if doubling use a larger springform pan.

Apples:
Peel apples, cut into quarters and core. Slice like very thin orange segments, but not all the way through, spread like a fan on top of cake and make a design by placing on top of dough in pan, starting at outside in a circle ending up in the middle, cut side up.Bake at 350ºF for 40 minutes until golden. Sprinkle with powdered sugar when cool.
