1 large onion, chopped
2 or 3 cloves garlic, chopped
1 bag frozen corn or 1 can corn
1 large can crushed tomatoes
1 large can chicken broth
1, 8 ounce package spinach (frozen or fresh)
1 package taco seasoning
2 or more types of beans (black, Great Northern, kidney, etc.)
Cut-up boneless chicken pieces - breasts or thighs

Directions:
Directions:
In a large soup pot, sauté chopped onion and chopped garlic in a little cooking oil. Add the frozen or fresh corn, crushed tomatoes, chicken broth, spinach, taco seasoning, and beans. Brown the chicken in oil and add to soup. Cook for one hour on low heat. Serve.
