1 lb easy peel shrimp, washed and peeled
2-3 tilapia filets
Southwest Ancho Seasoning (HEB)
1-2 jars Cookwell & Company Veracruz sauce (1 jar makes it more meaty, 2 makes it more saucy)
Grapeseed oil
Brown rice

Directions:
Cook Brown rice according to directions on the box

Wash seafood, coat outside of tilapia with the southwest Ancho Seasoning

Add about 2 tbs grapeseed oil to a deep skillet or a saucepan, turned up to medium-high.

Sear fish 2 min on each side or until it's easy to break apart.

Break fish apart with a spatula

Pour in Veracruz sauce

Add Shrimp, cook on medium heat covered until the shrimp pink up. Once they all pink up, turn off heat. (Be careful not to overcook the shrimp, this will make it chewy).

Serve over rice. Enjoy!

Peeling the shrimp takes the longest for this recipe. Other then that this is a quick and easy recipe for those busy nights!
