2 c cooked chicken, diced or shredded
2 quart containers chicken broth
Juice and zest of 2 lemons
1 tsp lemon herb seasoning (optional)
1/2 c orzo pasta or rice
1 T butter
1 onion, diced
3 carrots, diced
3 ribs celery, diced
Chopped parsley
Fresh or dried thyme
Chopped kale or spinach (optional)




Directions:
Directions:
In a soup pot, saute the onion, carrots, and celery in the butter until onion is translucent. Add the broth, bring to a boil and simmer for 10-15 minutes.

Add the lemon juice and zest and the herbs. Add the chicken and the orzo and continue to simmer until the orzo is cooked (about 6 minutes). Chopped kale or spinach may be added at this point, if desired. Season with salt and pepper to taste, and serve.

Makes 8 servings.
