Ingredients: 1 cup whipping cream 3 tbsp yeast ½ cup warm water 1 tbsp sugar 1 cup flour (roughly)

Directions:Bring whipping cream to a boil and cool to luke warm. Add flour (approx. 1 cup) to thicken. Mix yeast with warm water and sugar. Let rise. Add cream mixture to yeast mixture and rise again.
7 eggs 2 cups sugar 1 tsp salt 2 tsp vanilla ½ lemon rind
Beater mix egg yolks with sugar, salt, vanilla and lemon rind. Beat egg whites stiff. Add yolk mixture cream and yeast mixture from part 1 then add egg whites and let it sit a while.
6 cups flour (plus additional flour to make soft dough) 1 cup milk ¾ cup butter (plus additional butter to coat loaves), room temperature
Add mixture from previous 2 steps to 6 cups of flour. Warm milk to luke warm and add to flour mixture and then knead. Knead in ¾ cup butter – ½ at a time. Add additional flour to make a soft dough (up to 2 cups more). Knead with butter on bowl so it doesn’t stick. Put butter on dough surface, cover with a towel and let it double (1 ½ hours) in a warm very low temp oven. Put in baking pans and rise double again. Bake at 300°F for 10 minutes then 275°F for 35 minutes.
Icing 200g white chocolate 1 cup whipping cream 2 cups icing sugar (roughly)
Melt down white chocolate. Warm whipping cream and mix with melted chocolate, add a bit of vanilla. Add icing sugar 1 cup first then a bit at a time to reach desired consistency. |
