1 over ripe banana
(best if previously frozen, or nearly black)
1 tsp baking soda
½ tsp baking powder
½ cup mayonnaise
1 cup flour
½ cup sugar
Chocolate chips (optional)

Directions:
Directions:
Mash ripe banana and mix in baking soda and baking powder. Add mayo and mix again. Add flour and sugar and mix until just combined. Add a handful of chocolate chips or more to your taste.

Bake in lined muffin pan at 300°F for approx. 30 minutes.
