1 cup sugar
3/4 cup heavy cream
3 1/2 Tbsp unsalted butter
1 tsp gray sea salt, crushed or kosher salt

Directions:
In small heavy-bottomed pot, combine sugar and 1/4 cup water. Over low heat, cook, stirring frequently, until sugar dissolves, about 10 minutes. Increase heat and bring to a boil, without stirring. If necessary, use wet pastry brush to wash down any crystals on side of pot. Boil until syrup is deep amber color, 5 to 8 minutes. Remove syrup from heat; slowly and carefully whisk in cream. The mixture will bubble up. Stir in butter and salt. Transfer to bowl to cool. Sauce will thicken as it cools. Refrigerate for up to 2 weeks in covered container. Reheat before serving. Makes about 1 1/2 cups.
