Fruit Pickle Brine

1/2 cup white balsamic vinegar
1/4 cup sugar
2 tsp kosher salt

Bring all ingredients and 1 cup water to a boil in a medium saucepan over high heat. Remove from heat. Cool completely (about 1 hour), stirring occasionally.
 

Pickled Strawberries

1 lb fresh strawberries
2 fresh rosemary sprigs
Fruit pickle brine

Directions:
Directions:
Place strawberries and rosemary sprigs in a 24 oz jar with a tight-fitting lid. Pour fruit pickle brine over strawberries. Seal and chill 1 to 12 hours. Store in refrigerator up to 1 week.
 

Pickled Melon

1 lb honeydew melon
2 fresh thyme
Fruit Pickle Brine

Cut melon into chunks. Place melon and thyme sprigs in a 24 oz jar with a tight-fitting lid. Pour fruit pickle brine over melon; seal and chill. Store in refrigerator up to 1 week.
 

Pickled Peaches

1 lb fresh peaches
2 fresh mint sprigs
Fruit Pickle Brine

Place about 1 lb. fresh peaches, cut into slices and 2 fresh mint sprigs in a 24 oz jar with a tight-fitting lid. Pour Fruit Pickle Brine over peaches; seal and chill. Store in refrigerator up to 1 week.
