Soft or corn Tortillas
Shredded cheddar cheese, 4-5 cups
Bottle of your favorite taco sauce
Shredded roaster chicken
16 oz can of crushed tomatoes
1 small can enchilada sauce
Chopped Onion
Oil for pan
Taco seasoning
9x12 pan generously coated with cooking spray.

In a large pan, place oil. Add onion and cook till soft and translucent. Add tomatoes, chicken and taco seasonings. Cook 15 min over med heat.
Warm enchilada sauce in another shallow pan, like a frying pan. Use the enchilada sauce to dredge the Tortillas to wet them as you layer (just dip into the warmed sauce and remove).

Begin to layer the casserole pan starting with meat mixture, cheese, taco sauce, tortilla. Repeat layers and end with meat mixture on the top. Evenly pour any extra meat mixture, taco sauce, enchilada sauce over the casserole. Top with shredded cheese.

Bake uncovered for 20 min at 350 degrees

The recipe was my first introduction to two things. Mexican casseroles and the fact that my children liked other things from other people. Roberta made this all time and my kids loved it!
