2 TSP SUGAR
2 TSP SALT
3 C. FLOUR
1 ½ C. HOT WATER (110º)
¼ C. BAKING SODA
1 LARGE EGG
1 TBSP WATER
COARSE KOSHER OR SEA SALT

425º oven.

In large bowl, mix yeast, sugar, salt, and 1 cup flour. Add hot water and mix well with whisk, rotary beater or mixer. Let set for 10 minutes to sponge. Add remaining flour until dough pulls away from sides of bowl. Turn onto floured surface and knead until no longer sticky. Put a little oil in the bowl and return dough to bowl. Swirl in oil and turn over. Cover with towel and let rise until doubled.

Turn onto slightly floured surface, punch down and cut into 16 pieces. Roll one piece of dough at a time into an 18-inch-long strip on a very lightly floured surface. Twist into pretzel shape; transfer to prepared baking sheet. Cover with towel and let rise slightly (about 15 minutes).

During rise time, fill a large kettle with 2" of water and bring to boil. Add ¼ cup soda (careful, it foams up) and 2 TBSP sugar. Carefully place 4 pretzels at a time into water and poach 1 minute on each side. Remove to cooling rack and let dry. Combine 1 egg and 1 TBSP water in small bowl. When pretzels are dry, transfer them to the greased baking sheet. Brush with egg mixture and sprinkle with course Kosher or sea salt. Bake at 425º for 12-15 minutes or until golden.

Store at room temperature.
