2 Tbls butter
3 1/2 cps whole corn kernals (4 ears fresh or you can use frozen)
1/2 tsp salt
1/2 tsp pepper
1 cp sweet yellow onion, finely diced
1/2 cp roasted red peppers, diced (canned is good)
4 green onions, diced
1 jalapeno, cleaned and diced
2 tsp garlic, minced
1/2 cp mayo
4 oz monterey jack or cheddar cheese, shredded
1/4 tsp cayenne
Tortilla chips and/or Corn chips for dipping

Directions:

Melt 1 Tbls butter in a large skillet over med heat. Add the corn, salt and pepper Cook stirring occasionally till the corn starts to brown, about 8 min. NOTE: Frozen corn isn't going to brown like fresh will. Remove to a bowl.

Melt the 2nd Tbls butter in the same skillet and add the onion and bell pepper, stir fry 2 min. Add the green onion, jalapeno and garlic, stir fry another 2 min or until the veggies are softened. Move to the bowl with the corn.

To the bowl, add the mayo, cayenne and half of the cheese - mix well. Place in a baby crock pot or other device to keep warm, top with the rest of the cheese.
