Tomato Sauce:
2 tbsp olive oil
1 medium chopped onion
2 cloves minced garlic
2 tsp basil
1 tsp oregano
1 quart tomato juice
1 tbsp sugar
6 oz can tomato paste
kosher salt and coarsely ground pepper to taste

Can be substituted with store bought marinara or spaghetti sauce

Cheese Filling:
2 eggs
2 tbsp parsley
1 tsp salt
1/2 tsp pepper
1 cup parmesan cheese
24 oz cottage cheese

18-20 jumbo pasta shells cooked al dente according to package directions
4 cups (2-8oz pkgs) shredded mozzarella cheese

Directions:
Sauté onions and garlic in olive oil until tender. Add basil, oregano, tomato juice, sugar, and bring to a boil. Stir in tomato paste and salt and pepper. Reduce heat and simmer while making filling.

Beat eggs with a fork and add parsley, salt, pepper, and parmesan cheese. Mix well and stir in cottage cheese. Spoon cheese filling into cooked shells. Place shells in 9x13 baking dish and top with mozzarella cheese. Cover with the tomato sauce and bake at 350º for 45 minutes.
