1 package chopped spinach, thawed
3 eggs, beaten
6 Tb. flour
2 c. cottage cheese
2 c. cheddar cheese, grated
1 Tb. salt
pepper to taste

Directions:

Preheat oven to 350º

Beat together eggs and flour until smooth. Mix in other ingredients.

Bake in a 2 qt. casserole dish, uncovered, for 1 hour.

Let stand 10-15 minutes before serving.

This recipe is from Suzzi Koening, Bubbe's friend from Anchorage. Suzzi was of Greek heritage and often shared this dish.

This is already has fewer carbs than spanakopita made with phyllo dough, but you can reduce the carbs even further by swapping out the flour with coconut flour.
