8 taco shells or tortillas/wraps (can use lettuce wraps for low-carb option)
1 (14.75 oz.) can pink salmon, drained
3 Tb. apple cider vinegar
1/3 c. mayonnaise
1 tsp. dried dill
1 tsp. sugar or Xylitol
1/2 tsp. salt
6 c. shredded cabbage (purple & green mixed)
1 c. diced cucumber
1/2 c. chopped onion

Directions:

Prepare taco shells, tortillas, or wraps. (To prepare store-bought tortillas, wrap two stacks of 4 tortillas each in foil. Warm in the oven for 15-20 minutes at 350ºF.)

In a medium bowl, mash salmon with skin and bones. Stir in 1 Tb. of vinegar.

In a large bowl, whisk remaining vinegar, mayo, dill, sugar, and salt until well blended. Add cabbage, cucumber, and onion. Toss to mix and coat.

Spoon salmon into shells/wraps. Top with coleslaw.
