2 red bell peppers chopped
1 medium onion, chopped
2 tsp chili powder
4 cloves garlic, chopped
Kosher salt and freshly ground black pepper
3 -16 oz. cans refried beans
2 cup grated Cheddar Cheese
2 cup grated Pepper Jack cheese

Preheat the oven to 350º.

Spread a little butter on the bottom of a 9x13” baking dish. Heat some butter in a large skillet over medium-high heat. Add peppers and onions and cook until softened, about 4 minutes. Add chili powder, garlic, jalapenos, and some salt and peppers and cook for one minute or two. Add beans to the skillet and stir to combine everything. Cook until warmed through, about 4 minutes. Spread half the beans in the prepared baking dish. Top with half the cheddar and Pepper Jack cheeses. Spread the remaining beans and top with the remaining cheeses. Bake until the cheese is melted and just beginning to brown, 20 to 25 minutes. Cover with foil before placing in oven to bake.
